Bolnisi is a Protected Designation of Origin (PDO) wine. This wine, crafted from the Asuretuli Shavi grape variety using the traditional Georgian Qvevri method, possesses a light cherry hue. It features prominent aromas of ripe fruit, such as cherry compote, raspberry jam, and barberry. This is an easy-drinking young wine characterized by a light body and pleasant acidity. On the palate, notes of cherry and red berries are clearly expressed.
While it is best enjoyed in its youth, the wine will maintain its quality in the bottle for several years. It pairs excellently with snacks, goat cheese, poultry pâté with berry sauce, and various mushroom dishes.
